Cauliflower Potato Soup with Peas


This chunky but thick and creamy soup is full of flavour and nutrition but also healthy and low in fat! Enjoy with a big slice of toasted sourdough bread for a filling and delicious plant-based meal.

Ingredients

1 heaping cup Carrot
2 cups Cauliflower
1 1/2 cups Celery
4 cloves Garlic
1 cup Green peas, fresh or frozen
1/2 tsp Parsley and thyme, dried
2 heaping cups Potato
2 cups White onion
Canned goods
4 1/2 cups Vegetable broth
Condiments
1 Spritz of fresh lemon juice
Baking & spices
1 Salt and pepper
